Dinner Made Easy

Now that I'm a wifey, I need to learn some quick meals so my husband doesn't starve and I can contribute to our dinners. Now, if you didn't already know, I hate cooking. Baking I love, but cooking no thank you. It's not that I can't do it, I just don't enjoy it.  Matt and I are on similar schedules now for our jobs so we try and take turns cooking. I found this recipe on Pinterest and it's so easy and absolutely delicious! We've made it a few times now and my husband loves it!


Rachel Ray 5 Ingredient Parmesan-Crusted Tilapia
Servings: 4
Prep: 10 Minutes
Cooking: 10 Minutes

Ingredients
    3/4 cup freshly grated Parmesan cheese
    2 teaspoons paprika
    1 tablespoon chopped flat-leaf parsley
    4 tilapia fillets (about 1 pound total)
    1 lemon, cut into wedges

Directions
    Preheat the oven to 400 degrees. In a shallow dish, combine the cheese with the paprika and parsley and season with salt and pepper. Drizzle the fish with olive oil and dredge in the cheese mixture. Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10 to 12 minutes. Serve the fish with the lemon wedges.

Now, mine didn't look as pretty as the above picture, I made sure to really pack on the mixture to the filets and added a bit to the top before baking. The second time I made it, I used a bit less of the parsley, for me it was a bit too strong.

Along with the fish, I also made some parmesan zucchini chips. I looked at a bunch of recipes and just combined what I thought would be good.

Ingredients
    Parmesan cheese
    Sea Salt
    Olive Oil
    1 zucchini (for two people)
    Desired extras: garlic, crushed red peppers, whatever you like!
 
Directions
    Preheat the oven to 400 degrees. Slice zucchini into chips (spears would work too) and place on a cookie sheet. Brush on olive oil, sprinkle with rock salt, and shredded parmesan cheese. On some of the chips I also put crushed red peppers, garlic would also be delicious! Bake for 30 minutes. I also want to try this same recipe with tomatoes, I think that would be tasty.

So, this is what we've been eating lately and it's the perfect dinner (we've also included corn or salad as sides). It's lightweight and still filling. Best of all it's simple!

I was the same way- I loved baking and hated cooking but I've come around a bit and I've learned to live with it. My husband is a wayyyy better cook than I am though!

Both of these sound SO GOOD!! I'll definitely be adding them to my "must try" list. We like fish when we go to a restaurant, but we hardly ever cook it. And I'm with you on the baking... love it. I hate cooking, but I like eating. HAHA

We've been eating something similar. I've been making fish in aluminum foil packets with lemon and butter. It's amazing!
