For the Superbowl I made this yummy snack I found on
Pinterest from
Bakergirl. It was delicious! It was super sweet though.
Here's the recipe:
1 bag of popcorn, popped
8 ounces of white chocolate candy coating, melted (I used melting chips from Michaels craft store...IDK if there's a difference)
4 heaping teaspoons of yellow cake mix
Mini M&Ms (I had a difficult time finding these and almost went with regular M&Ms and I'm so glad I didn't! The size would be too much. Definitely use the minis!)
Assorted sprinkles
Pop popcorn and spread out on a paper towel, removing any kernels or burnt pieces, and place in a large bowl. Mix in mini M&Ms.
Melt white chocolate in the microwave in 30 second intervals, stirring in between, until melted and smooth. Stir in cake mix until smooth, then stir in about 3 teaspoons of sprinkles. Immediately pour over popcorn. Using a wooden spoon, mix the popcorn and M&Ms until completely coated.
Pour out onto wax paper or into a wax-paper lined jelly roll pan and spread into a single layer. Sprinkle with sprinkles until festive, then let cool and harden. Break into pieces and enjoy!
It's pretty simple to make it, but mixing the chocolate over the popcorn was kind of difficult. I tried doing it across a cookie sheet, but the popcorn kept falling over the sides and then I tried mixing a little bit at a time in a big bowl and that worked a little bit better.
Next time I make it, I'm going to add something crunchy like pretzel sticks or Chex cereal. I also think it would be good to do a drizzle of milk chocolate on the top.
Mmmmmm...maybe I'll make it again today.
