Easy Recipe: Fish Tacos + Veggies

I almost want to say "I'm on a roll with cooking", but really, let's not push it. Last week I was in Trader Joe's and they had some delicious fish taco samples. I'm not usually a big fish taco person, although I love seafood. These were just so amazing, I had to re-create them!

Now, you can make these with a variety of brands and condiments, but I literally just bought everything they used at Trader Joes. Easy enough right?



Here is the display of products they used at the sample counter:
-Oven Ready Breaded Cod Fillets
-Shredded Green Cabbage
-Pico de Gallo
-Corn Tortillas
-Tartar Sauce with Jalapeno (you could also use their Creamy Cilantro dressing)
- Four Cheese Mexican Blend Cheese

Cook the fillets, warm up the tortillas, and top with your goodies! Guacamole and a squeeze of lime would also be delicious! For the tartar sauce, I thinned it out with some half and half which also tones down the jalapeno spice.


I served the tacos with asparagus and zucchini, both topped with olive oil and garlic salt and baked for 30 minutes. I also added shredded parmesan cheese on the asparagus and cayenne pepper on the zucchini. It's best to put the veggies in first because the fillets only take 20 minutes.

We're totally making these tacos over and over again! They were so super easy and the family ate them right up! I'm so happy I tried something new and found a completely amazing and easy meal!

These sound so yummy! I love fish tacos, but I've never found a recipe that I've liked! I'll be trying this! :)
